Tea Production
The first step in tea production is to harvest the plant. The top two leaves and the bud leaf are picked from the end of a branchlet and are transported to the factory for processing. Two primary methods, CTC (crush, tear, curl) and orthodox, produce the three major types of finished tea: green tea which is unfermented, oolong tea which is semi-fermented, and black tea which is fully fermented.
